Season IX: Pedro Arias Lopez and Crescencio Villar, owners, Corazón 805 Tacos, San Luis Obispo, CA

 

Pedro Arias Lopez and Crescencio Villar own and operate Corazón 805 Tacos, a mobile taco catering company that pops up all over California’s Central Coast. Pedro and Chencho each worked their way up from being dishwashers in restaurants like Novo and Big Sky Cafe, and today each of them manages staff at their respective restaurants. Both born in Mexico, they saw an opportunity to bring a new kind of Mexican food to San Luis Obispo County. While working full-time in their day jobs, Pedro and Chencho have experimented with different ingredients, methods, and regional styles, particularly when it comes to vegetarian and vegan options. This is in large part thanks to the influence of Sara, Pedro’s wife, who is a lifelong vegetarian and who joins the guys in our interview.
